Do the novelty shapes actually function well?
Yes; under the styling they are standard water pipes with standard joints and bowls. Pick the shape you love and the function takes care of itself.
Is the gas mask a gag or a real piece?
Both. The mask is a novelty and it is priced as the top of the shelf at $59.99, but the water pipe bolted to it is a functioning one. Most of them leave the store as a gift or a party centerpiece.
Do specific characters stay in stock?
